TOMATO CHICKEN

 

 

INGREDIENTS

 

3 drumsticks Chicken boned and chopped

2 small Tomatoes chopped

1 small Onion chopped

3 tbsp Cooking oil

1 tsp Basil dried

1/2 tsp Sugar

1/4 tsp Nutmeg

2 pinches MSG (optional)

1/3 cup Water

Salt to taste

 

Marinade

2cm Ginger minced

1 tsp Vinegar

1 tsp Chilli powder

1 tsp Chinese cooking wine

1/2 tsp Sugar

1 tbsp Corn Flour

METHOD

 

 

Marinate the chicken by combining the marinade ingredients and chicken in a bowl and leaving for at least 2 hours

 

 

Heat 2 tbsp cooking oil in a fry pan on high heat

 

 

Add the chicken and fry until it browns

 

 

Set the chicken aside until needed

 

 

Put 1 tbsp of cooking oil in the fry pan and add tomato

 

 

Add basil

 

 

Add onion

 

 

Return the chicken to the pan

 

 

Add salt

 

 

Add sugar

 

 

Add nutmeg

 

 

Add water

 

 

Add MSG (optional)

 

 

Serve on boiled rice with vegetables
