THAINESE CHICKEN

 

 

INGREDIENTS

 

250g Chicken meat roughly chopped

1 clove Garlic chopped finely

1/4 tsp Ginger minced

1 Spring onion chopped finely or 2 tbsp dried shallots

1 tsp Chicken stock

1/2 tsp Preserved soya bean

1 tbsp Fish sauce

1/8 tsp Black pepper

3 Black mushroom sliced

1 Birds eye chilli chopped finely

2 Kaffir lime leaves chopped finely

1 sprig Lemon grass chopped finely

1/3 cup Water

1 tsp Sugar

2 tbsp Cooking oil

 

Marinade

1 tsp Soya sauce

1 tsp Rice wine

2 drops Sesame oil

1 tsp Corn flour

METHOD

 

 

Marinate the chicken meat for about half an hour

 

 

Heat a fry pan and add cooking oil

 

 

Add lemon grass

 

 

Add marinated chicken meat and cook until it browns

 

 

Remove the meat from the pan and set aside

 

 

Add garlic and fry until fragrant

 

 

Add ginger

 

 

Add chicken stock

 

 

Add preserved soya bean

 

 

Return the meat to the pan

 

 

Add fish sauce mix in well

 

 

Add sugar

 

 

Add kaffir lime leaves

 

 

Add mushroom

 

 

Add water

 

 

Add pepper

 

 

Add dried shallots or spring onion
