SPICY PRAWNS

 

INGREDIENTS

 

15 large Prawns peeled and cleaned
1 tsp Chilli powder
1/8 tsp Fenugreek powder
1/8 tsp Turmeric powder
1 sprig Lemon grass sliced finely
1.5 Kaffir lime leaves sliced
1 tsp Dried garlic
2 tbsp Cooking oil
1 tsp Sugar
2 tbsp White Vinegar to taste
1/8 tsp Star anise powder and ground cinnamon
Pinch of MSG (optional)

 

An alternate recipe for fish uses the following:

Marinate fish in
1 tsp Thai soya sauce
1/8 tsp salt
1/8 tsp sugar
1/8 tsp corn flour

Fry fish in oil until lightly browned then remove and set aside then use the method described below adding the fish at the stage prawns are mentioned.

METHOD

 

 

Combine all powdered ingredients in a bowl and set aside

 

 

Heat oil in a wok

 

 

Fry lemon grass until fragrant

 


Add kaffir lime leaf

 


Add all powders

 


Add sugar

 


Add Salt

 


Add MSG (optional)

 


Add dried garlic and then mix well over heat

 

 

Add vinegar

 


Add prawns

 


Mix together well and cook until prawns are done

 


Add a small amount of water if needed

 


 

The finished dish is best served on rice with your choice of vegetables
