ROTI

INGREDIENTS
300g Plain flour 150g Ghee 1/4 tsp Salt 1/3 cup Water 1 Egg (whisked) Cooking oil (to soak dough in)

METHOD
Sieve the flour into a large bowl.
Mix the salt in the water and set aside until needed.
Whisk the egg in a small bowl
Add the ghee and rub in to the flour using your fingers.
Whisk the egg in a small bowl and add it slowly to the flour one spoon full at a time.
Add the water/salt mix slowly
Kneed the mixture until it is firm and smooth
Break the dough up into small balls and drop into a bowl of oil.
Leave this overnight in the fridge. Remove the dough balls from the oil and wipe of any excess. On a large worktop spread the dough out until it is VERY thin.
Heat a hot plate and rub briefly with cooking oil Cook the roti on the hot plate.
Serve with your favourite curry or sambal.
