150g Fish fillets. These must be very fresh. Garfish or cod are good for this dish.
2 tbsp Cooking oil
2 cloves Garlic chopped finely
1 tsp Sugar
1/4 tsp Sesame oil
1 cm Minced ginger

Fillet the fish and cut into strips.



Slice the strips into slivers that are a thin as possible and about 2 inches long.



Place the fish strips into a bowl and set aside.


Put the cooking oil into a fry pan and heat.



Add the garlic and fry until brown and fragrant.



Add the ginger.



Stir for a few seconds then add the sugar.



Stir through and then turn off the heat. Allow to cool.


Add sesame oil to the fish in the bowl.



Add the marinade to the fish and stir through.



Add the soya sauce and stir through.




Put in the fridge and let stand for at least an hour.
