18 Prawns (medium). Slice the front end of the head off but leave the rest of the prawn intact.
3 cloves Garlic finely chopped
1 Onion finely chopped
1 tsp Ginger
3 Chillies chopped (dried or fresh)
1 tbsp Oyster sauce
1 tbsp Soya sauce
1 tsp Corn flour in 1/4 cup Water
1 tsp Sugar
1 tbsp Black caramel soya sauce
2 Spring onions chopped into 2 short lengths
1 cap Shao xing wine
2 tbsp Cooking oil
Pinch of MSG (optional)
Salt to taste

Heat the oil in a fry pan and add the garlic. Fry until fragrant.



Add the onion



Add the ginger



Add the prawns



Add salt



Add oyster sauce



Add the caramel soya sauce



Add the sugar



Add the corn flour mix



Add the soya sauce



Add the spring onions



Add MSG (optional)



Add the Shao xing wine



Serve on a bed of rice with your choice of vegetable.
