CHILLI PRAWNS (INDIAN STYLE)

 

INGREDIENTS

 

15 large Prawns
1 sprig Curry leaves (20 leaves or so)
1 Onion chopped finely
4 cloves Garlic chopped finely
1/4 tsp Fenugreek
1 tsp Chilli powder
1/4 tsp Star anise powder
1/4 tsp Cinnamon powder
1 tsp Sugar
2 tbsp Cooking oil
Pinch of MSG (optional)
Salt to taste

METHOD

 

 

Heat the oil in a wok and add the curry leaves. Stir briefly.

 

 

Add garlic and fry until brown and fragrant

 

 

Add the onion and fry until it softens

 

 

Combine the fenugreek, chilli, star anise and cinnamon in a bowl and then add to the wok

 

 

At this stage you can add a little more oil if the mix looks too dry

 

 

Now add in the chopped prawns

 

 

Add in the sugar

 

 

Now add salt to taste

 

 

If the mix still seems dry add a small amount of water

 

 

Add MSG (optional)

 

 

Continue to cook for a few minutes to ensure the ingredients are well mixed

 

 

The finished dish can be served on rice with vegetables or with flat bread and dahl.
