CHAR SIEW

 

INGREDIENTS

 

600g Pork cut into 4 pieces
3 cloves Garlic minced
1 1/2 tbsp Cooking oil

Sauce
3 tbsp Sugar
1 1/2 tbsp Honey
1 1/2 tbsp Hoisin sauce
1 1/2 tbsp Soya sauce
1 tbsp Shao xing wine
3 pinches White pepper
3 drops Red food colouring
1/2 tsp 5 spice powder
1/2 tsp Sesame oil
1/3 cup Water

METHOD

 

 

Place pork in a container with the minced garlic and mix well.

 

 

Allow the pork to rest while you prepare the sauce.

 

Place water and granulated sugar in a saucepan and heat until the sugar dissolves.

 

 

Add the rest of the sauce ingredients and stir until it thickens.

 

Allow to cool.

 

Take 2/3 of this mixture and put into a container with the pork.

 

 

Put the extra 1/3 sauce aside in the fridge until ready to cook the pork.

 

 Leave pork overnight in the fridge if possible.

 

Cooking.

 

Grill the pork and baste with the remaining sauce.

 

 

 Cook until the meat is well done.

 

 

 Slice the pork into slivers to serve.

 

 

 

 Serve on a bed of rice with your choice of vegetable.
