PRAWNS & BLACK BEAN

INGREDIENTS
12 large Banana prawns with heads and vein removed 1 tbsp Rice wine 1 tbsp Apple cider vinegar 1 tbsp Light soya sauce 2 tbsp Black beans crushed 1 Red chilli (fresh) chopped 2 Dried (birds eye hot) chilli chopped 3 cloves Garlic sliced 3 baby squid cleaned and sliced 4 tbsp Cooking oil 1 tsp Sugar 2 pinches MSG (optional)

METHOD
Crush the black beans using a mortar and pestle
Put 2 tbsp cooking oil in a fry pan, put heat on high and add the prawns
Fry the prawns until they are cooked and remove and put aside
Add the squid to the pan and cook for a couple of minutes
Remove and put aside with the prawns
Put the remaining cooking oil in the pan and add the chillies (stir briefly after each of the following steps)
Add the garlic
Add the black beans
Reduce heat to medium and return the prawns and squid to the pan
Add sugar
Add soya sauce
Add vinegar
Add rice wine
Add MSG (optional)
Add the onion and cook until it is translucent
Serve on boiled rice with your choice of vegetable dish
