BASIL CHICKEN

 

 

INGREDIENTS

 

6 Chicken legs (de-boned)

25 Basil leaves

1 Red onion sliced

4 cloves Garlic finely chopped

2 Birds eye chillies de-seeded & chopped

1 tbsp Sweet soya sauce

1 tbsp Fish sauce

1/4 tsp White pepper

1/2 tsp Sugar

2 pinches MSG (optional)

3 tbsp Cooking oil

METHOD

 

 

If you are using fresh basil leaves then wash and set aside

 

 

Heat the cooking oil in a fry pan and add the garlic. Cook until fragrant.

 

 

Add the onion and fry until it starts to soften

 

 

Add the chicken meat and brown

 

 

Add fish sauce

 

 

Add sweet soya sauce

 

 

Add salt

 

 

Add sugar

 

 

Cover and cook for a couple of minutes

 

 

Add the chilli

 

 

Cover again and cook for another couple of minutes

 

 

Add the basil leaves and cook until they go limp

 

 

Add MSG (optional)

 

 

Add white pepper

 

 

Serve on boiled rice with your choice of vegetable dish.
